The every-year rule is habit, not chemistry: the Natural Stone Institute says most granite countertops do not strictly need sealing (though many benefit from it), and quality sealers today last 10-15 years. Skip the calendar and use the water test — leave a few drops on a heavily used spot for 15 minutes; if it beads, the seal is fine, and if it soaks in and darkens the stone, reseal. Porosity varies enormously between stones: a dense dark granite may never need sealing while a light porous one wants it regularly. Either way the chore is a $10-$20 bottle of sealer and about 30 minutes, not a service contract.
