If black spots appear, sand to bare wood, treat with oxalic-acid wood bleach, and re-oil; if the wood is soft or the stain returns immediately, water is getting underneath the finish and the section around the sink may need replacement.

Black marks are water stains — standing water reacting with the wood. Three habits prevent them: towel-dry the area around the sink every time (never let water pool), oil the wood monthly with food-grade mineral oil including the sink cutout edges, and top with a beeswax board cream so water beads instead of soaking in. If black spots have already formed, oxalic-acid wood bleach followed by sanding and heavy re-oiling can reset the surface — a repair no stone counter offers.
